Cozy Fall Flavors in Every Bite!

These apple pie banana bread muffins are about to become your new favorite fall indulgence. Imagine the warmth of cinnamon, tender banana bread, and sweet, juicy apple chunks all wrapped up in one perfect muffin. And letโ€™s not forget that crunchy streusel topping! Each bite is like a comforting hug, topped off with a drizzle of creamy, dreamy cream cheese icing.

If you love classic banana bread muffins, these are the next level up. The subtle sweetness from the apples takes it to a whole new place, blending together to create the most deliciously moist texture with just the right amount of crumble. Plus, theyโ€™re high in protein, making them the ideal treat that not only satisfies your sweet tooth but keeps you full for hours.

And letโ€™s talk about that streusel. Itโ€™s the perfect finishing touchโ€”a crumbly, buttery layer that adds a little crunch to every soft, fluffy muffin. You get the cozy feeling of apple crumble muffins with the comfort of banana bread, all rolled into one treat. Oh, and did I mention these have a cream cheese muffin vibe with the icing? Honestly, theyโ€™re hard to resist.

So, whether youโ€™re whipping these up to share or keeping them all to yourself (I totally support either decision), theyโ€™re incredibly easy to make. A quick mash of bananas, a mix of dry and wet ingredients, and youโ€™re ready to bake. Once theyโ€™re out of the oven and drizzled with that luscious icing, youโ€™ll wonder how you ever survived fall without these apple pie banana bread muffins in your life.

Instructions

Wet:

  • Add your ripe bananas to a large mixing bowl and mash with a masher or fork until lumpy.
    190 g (1.25 cups) Ripe Banana
  • Then add in the remaining wet ingredients. Mix until incorporated. Itโ€™s fine to have lumps from the bananas!
1 Large Brown Egg, 30 ml (2 tbsp) Unsweetened Protein Plant Milk, 75 g (0.33 cup) Non Fat Greek Yogurt, 30 ml (2 tbsp) Sugar Free Syrup, 1/2 tbsp Vanilla Extract

Dry:

  • Add in the dry ingredients, leaving out the apples for now. Mix until you have a thick batter.
60 g (0.5 cups) All Purpose Flour, 60 g (0.5 cups) Keto Wheat Flour, 29 g (0.25 cups) Unflavored Whey Casein Blend Protein Powder, 1 tsp Baking Powder, 1/2 tsp Baking Soda, 1 tsp Salt, 1 tsp Apple Spice Seasoning
  • Add in the cubed apples and then mix again until incorporated.
    100 g (0.75 cups) Granny Smith Apples
  • Grab a muffin tray and line with 8 muffin liners. Fill them each equally. To be exact, I like to weigh out the total batter and then divide them up into 8.
  • Preheat your oven to 350ยฐ.

Streusel:

  • In a smaller mixing bowl, add in your ingredients for the streusel.
30 g (0.25 cup) All Purpose Flour, 15 g (2 tbsp) Unflavored Whey Casein Blend Protein Powder, 8 g (2 tsp) Zero Calorie Brown Sweetener, 8 g (2 tsp) Zero Calorie White Sweetener, 1/2 tsp Apple Spice Seasoning, 1 tsp Vanilla Extract, 15 ml (1 tbsp) Unsweetened Protein Plant Milk, 7 g (0.5 tbsp) Flaxseed Oil Light Butter
  • Mix until itโ€™s a nice crumbly texture. Again, I like to weigh the total amount and then divide into 8.
  • Top each muffin with your streusel and then bake for 18-20 minutes. Check with a toothpick to ensure the middle is set.

Icing:

  • While those bake, add your icing ingredients to another mixing bowl and whisk until smooth. Are more or less milk to achieve desired consistency.
57 g (2 oz) Reduced Fat Cream Cheese, 20 g (2.5 tbsp) Monkfruit Powdered Sugar, 30 ml (2 tbsp) Unsweetened Protein Plant Milk, 1/2 tsp Vanilla Extract
  • Once the muffins have baked, let them cool for at least 15 minutes before topping with your icing.

Store:

  • You can add your icing to each muffin and store them in an airtight container or store both items separately and add icing whenever youโ€™re ready to eat.
