I am not exaggerating when I say this is probably one of my favorite French toast recipes I have ever made. This is my high-protein version of sticky toffee pudding but in a Hong Kong style French toast form. Imagine slices of bread layered with a sweet date paste, then air fried to crispy perfection and topped with the most delicious sticky toffee sauce. Finish it off with some Cool Whip and a sprinkle of flaky sea salt for an unbeatable breakfast experience.

Everyone loves a good French toast, and with the added benefits of being low in fat and packed with protein, itโ€™s not just a treat for your taste buds but also a healthier option for your mornings. If youโ€™ve enjoyed stuffed French toast or a decadent sticky toffee pudding before, this recipe is for you. It combines all the rich flavors and textures you love but in a healthier, protein-packed form.

Ingredients

Date Paste:

  • 60 g Whole Dates (Joolieโ€™s)
  • 1-2 tbsp Hot Water

French Toast:

  • 8 Slices Seeded Bread (Higher Harvest by H-E-B)
  • 1 Large Brown Egg (Vital Farms)
  • 60 ml Protein Plant Milk (Good Karma)
  • ยฝ tsp Cinnamon

Sticky Toffee Sauce:

  • 28 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 15 ml Protein Plant Milk (Good Karma)
  • 7 g Unflavored Protein Powder (Quest)
  • 7 g Unsalted Butter (Vital Farms)
  • 32 g Zero Calorie Brown Sugar (H-E-B)
  • 10 g Coconut Sugar (Big Tree Farms)

To Top:

  • 18 g Reduced Fat Whipped Cream (Cool Whip)
  • Flaky Sea Salt

Instructions

Date Paste:

  • Remove the seeds from your dates and add to a blender.
    60 g (4) Whole Dates
  • Pour in 1 tbsp of hot water and blend. You want a paste consistency so add more water if needed.
    1-2 tbsp Hot Water

French Toast:

  • Grab a slice of bread and spread on a thin layer of the paste. Repeat until you make a sandwich of 4 slices.
    8 Slices Seeded Bread
  • This recipe makes two servings so use enough paste for both sandwiches. (I like to separate the date paste in half and then use just that amount for each French toast sandwich.)
  • Once you have your two sandwiches, cut off the crusts and set aside. You donโ€™t want to waste those!
  • Make your French toast mixture by mixing together the egg, milk, and cinnamon in a flat dish.
    1 Large Brown Egg, 60 ml (0.25 cups) Protein Plant Milk, 1/2 tsp Cinnamon
  • Dip each of the sandwiches in there and coat evenly. Donโ€™t leave for too long otherwise it will get soggy.
  • Add to a parchment lined air fryer basket. Repeat for the crusts as well. Pour over any remaining mixture. No wastage around here!
  • Air fry at 400ยฐ for 10 mins, flipping everything over halfway.

Sticky Toffee Sauce:

  • In a blender, add in your yogurt, milk, and protein powder. Blend until smooth. This will be your โ€œheavy creamโ€ for the sauce.
    28 g (0.25 cups) Nonfat Greek Yogurt, 15 ml (1 tbsp) Protein Plant Milk, 7 g (1 tbsp) Unflavored Protein Powder
  • In a small pot, add in your butter on low heat and melt. Then add in the brown sugar and mix the two together.
    7 g (0.5 tbsp) Unsalted Butter, 32 g (8 tsp) Zero Calorie Brown Sugar
  • Then pour in your โ€œheavy creamโ€ and cook until nice and creamy with no lumps.
  • Finally, add in your coconut sugar to bring in that rich brown color.
    10 g (2 tsp) Coconut Sugar

To Serve:

  • Poke holes with a toothpick into each of your French toast sandwiches to allow the sauce to seep through.
  • Add half of the sauce to each French toast and spread. Then add 9g of Cool Whip to each.
    18 g (0.25 cups) Reduced Fat Whipped Cream
  • Finally, finish it off with some flaky sea salt and enjoy your beautiful creation!
