Ingredients

  • 2 Large Brown Eggs (Vital Farms)
  • 46 g Egg Whites
  • 2 slices 100% Whole Grain Sugar Free Bread (Natures Own)
  • 30 g Avocado
  • 10 g Crushed Calabrian Peppers
  • 14 g Fat Free Feta (Athenos)
  • Chopped Cilantro
  • Everything But the Bagel Seasoning

Instructions

  • Bring a pot of water to a boil. Then turn it down to a slow roll and add in your silicone poach egg basket. ;If not using, you can make it the traditional way by creating a swirl in the water.)
  • Drop in the egg and let it cook for 2-3 minutes, until egg whites have coated and cooked around the yolk. Drain the egg and repeat for the second egg.
    2 Large Brown Eggs
  • Meanwhile, in a small pan, scramble together your egg whites and toast up your sliced bread.
    46 g (3 tbsp) Egg Whites, 2 slices 100% Whole Grain Sugar Free Bread
  • Assemble your toast by spreading on your avocado, and adding the egg whites with poached egg on top.
    30 g (2 tbsp) Avocado
  • Spice it up with crushed Calabrian peppers and more protein with fat free feta.
    10 g (2 tsp) Crushed Calabrian Peppers, 14 g (1 tbsp) Fat Free Feta
  • Lastly, garnish with fresh cilantro and sprinkle on everything but the bagel seasoning.
