Double Chocolate Fudgy Protein Balls
Ingredients
Dry:
- 240 g Oat Flour (Higher Harvest)
- 2 scoops (66g Chocolate Protein Powder (Bluebonnet))
- 15 g Cacao Powder (Navitas Organics)
- 13 g Powdered Peanut Butter (PB2)
- Pinch of Salt
Wet:
- 16 g Peanut Butter (smooth)
- 30 g Sugar Free Syrup (Ms. Butterworths)
- 180 g Unsweetened Plain Milk (GoodKarma)
To Top:
- 28 g Semi Sweet Morsels
- 30 g Unsweetened Plain Milk
- 12 g Dry Roasted Peanuts (chopped)
Instructions
- In a large bowl, add in your flour, protein powder, cacao powder, powdered peanut butter, salt, creamy peanut butter, and syrup.240 g (2 cups) Oat Flour, 2 (½ cup) scoops, 15 g (1 tbsp) Cacao Powder, 13 g (2 tbsp) Powdered Peanut Butter, Pinch of Salt, 16 g (1 tbsp) Peanut Butter, 30 g (2 tbsp) Sugar Free Syrup
- Give it a mix and then slowly start to add in your milk, 1/4 cup at a time. I ended up using a total of 180g. You want it to be a dough texture and neither dry nor mushy.180 g (0.75 cups) Unsweetened Plain Milk
- Refrigerate for at least 15 minutes.
- Then, use a tbsp measuring spoon and scoop out some mixture, roll in your hands and add to a plate/tray. Continue until all the dough has been used. Mine made around 22 bites.
- Refrigerate again for another 15 minutes while you prep the chocolate and chop the peanuts.
- Add your chocolate chips to a small bowl with 30g of milk. Microwave for 30 seconds and then mix until smooth.28 g (2 tbsp) Semi Sweet Morsels, 30 g (2 tbsp) Unsweetened Plain Milk
- Remove the balls from the fridge and top each with a small tsp of chocolate until all is used. Mine was the perfect portion! Then top each with a sprinkle of peanuts.12 g (1 tbsp) Dry Roasted Peanuts
- Keep refrigerated and enjoy throughout the day!
