Ingredients
- 168 g Cascatelli Artisan Pasta (Trader Joe’s)
- 278 g Broccoli Florets
Sauce:
- 330 g Low Fat Cottage Cheese (Good Culture)
- 100 g Freshly Shaved Parmesan (BelGioioso)
- 120 ml Lactose Free Fat Free Milk (H-E-B)
- Salt & Pepper (to taste)
- 1 tsp Garlic Powder & Italian Seasoning
- Pasta Reserve (to thin as needed)
Instructions
- Boil your pasta al dente according to package instructions.168 g (3 cups) Cascatelli Artisan Pasta
- Steam your broccoli in the microwave in a bowl filled with water for roughly 2-3 minutes.278 g (3 cups) Broccoli Florets
Sauce:
- In a blender, blend together all the sauce ingredients (leave the pasta water out until the end).330 g (1.5 cups) Low Fat Cottage Cheese, 100 g (1 cups) Freshly Shaved Parmesan, 120 ml (0.5 cups) Lactose Free Fat Free Milk, Salt & Pepper, 1 tsp Garlic Powder & Italian Seasoning
- In a large pan, add in your sauce on low heat and bring it up to a simmer.
- Keep mixing it and then add in your boiled pasta and steamed broccoli. Toss and coat it all evenly. If the sauce is too thick, add in some pasta reserve.Pasta Reserve
- Serve into three equal portions and top with more shaved Parmesan and crushed red pepper.
