All the Flavor of Carrot Cake—For Breakfast!
This carrot cake French toast is what brunch dreams are made of. Think warm cinnamon, hints of nutmeg, sweet grated carrots, and a creamy yogurt filling—all stacked between golden slices of high protein French toast. It’s a nostalgic nod to classic carrot cake, but in toast form, with a healthy twist and absolutely zero protein powder needed.

Why You’ll Love this Carrot Cake French Toast
The magic starts with a spiced French toast batter, loaded up with fresh grated carrots for that signature carrot cake vibe. You’ll soak thick slices of high-protein bread until perfectly coated, then cook them up until the outsides are crisp and golden while the inside stays soft and fluffy. As those sizzle on the skillet, you’ll whip together a dreamy carrot cake-style filling using nonfat Greek yogurt, a touch of sweetener, and warm spices. It’s like the creamy middle of a frosted carrot cake—only lighter, tangier, and totally brunch-appropriate.
Layer it up, finish with a sprinkle of chopped walnuts, and drizzle on some sugar-free maple syrup for good measure. Whether you’re planning your Easter brunch or just craving something sweet and satisfying, this carrot cake toast delivers in every bite.
This high protein French toast without protein powder is everything you want in a cozy breakfast: nourishing, flavorful, and easy to make. Just the right amount of indulgence, minus the sugar crash.
