Instructions
French Toast:
In a shallow dish, add in your egg, milk, vanilla, and spices. Give it all a good whisk.
50 g(1) Large Brown Egg, 15 ml(1tbsp) Nonfat Milk, 1 tsp Vanilla Extract, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg
Grate or shred your carrots and add to the mixture. Mix until well incorporated.
20 g(2tbsp) Grated Carrots
Place a pan on medium heat and spray with olive oil. Dip your bread in the mixture and coat on both sides. Add to the pan and cook until golden brown. Repeat for the next slice.
3 second Olive Oil Spray, 90 g(2slices) Protein Bread
Yogurt Filling:
In a mixing bowl, add in your ingredients besides the carrot and whisk till smooth.
Add a tbsp of water to get a thinner consistency. Finally, mix in the carrots.
20 g(2tbsp) Grated Carrots
Place a french toast in a plate and layer with a big dollop of your filling. Smooth it out and then layer the other french toast slice. Repeat with the yogurt.
Toppings:
Sprinkle the top with chopped walnuts and a drizzle of sugar free syrup. Grab your fork and knife and dig in!
