Caramelized Pear French Toast
Ingredients
Pears:
- 7 g Unsalted Light Butter (Smart Balance!)
- 1 Bartlett Pear (peeled and halved)
- 8 g Zero Calories Sweetener (H-E-B)
- Pinch of Cinnamon
French Toast:
- 1 Extra Large Egg (Vital Farms)
- 46 g Egg Whites
- 90 ml Unsweetened Protein Plant Milk (Good Karma)
- ½ tsp Vanilla Extract
- 15 g Unflavored Whey Casein Protein Powder (Naked Nutrition)
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- 6 slices Sprouted Grain Bread (Food for Life)
Yogurt Whip:
- 113 g Plain Whole Milk Greek Yogurt (Wallaby Organic)
- ½ tsp Vanilla Extract
- 15 ml Sugar Free Syrup
Toppings:
- Powdered Sugar
- 30 ml Sugar Free Syrup
Instructions
Pear:
- Clean and prep your pears. Remove/cut off any excess stems.1 (0.4 lb) Bartlett Pear
- To a small pan on low to medium heat, melt in your butter. Then add in your pear halves face down. Sprinkle the tops with half of your sugar and cinnamon.7 g (0.5 tbsp) Unsalted Light Butter, 8 g (2 tsp) Zero Calories Sweetener, Pinch of Cinnamon
- Let these sit and cook on low while you cook your French toast.
French Toast:
- In a shallow dish whisk together the egg, milk, and vanilla. Then add the protein powder, cinnamon, and nutmeg. Make sure everything is mixed well. Don’t worry if there are lumps from the protein powder.1 Extra Large Egg, 46 g (3 tbsp) Egg Whites, 90 ml (0.25 cups + 1 tbsp) Unsweetened Protein Plant Milk, 1/2 tsp Vanilla Extract, 15 g (0.47) Unflavored Whey Casein Protein Powder, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg
- Dip each slice of bread and coat front and back. Remove immediately and add to a nonstick pan on medium heat.6 slices Sprouted Grain Bread
- Cook on each side until golden brown. Repeat until all slices of bread are used.
Pears:
- During this time, the pears should be softening. Flip them over to reveal the beautiful caramel colored bottom. Sprinkle with the remaining sugar and let it cook for a minute.
Yogurt Whip:
- Meanwhile, mix the whip ingredients together in a small bowl until smooth.113 g (0.5 cups) Plain Whole Milk Greek Yogurt, 1/2 tsp Vanilla Extract, 15 ml (1 tbsp) Sugar Free Syrup
Serve:
- Slice your pears for serving. Add three of your french toast slices to a plate. Dollop of yogurt, topped with slices of pear. Repeat for the second serving.
