Breakfast Tiramisu Crepe Cake
Ingredients
Crepes:
- 200 g Large Brown Eggs (Vital Farms)
- 640 ml Nonfat Milk (Whole Foods)
- 120 ml Cold Brew Concentrate (Chameleon)
- 16 g Vanilla Extract (Nielsen Massey)
- 120 g Unbleached All-Purpose Flour (King Arthur)
- 60 g Vanilla Protein Powder (Quest)
- Olive Oil Spray
Coffee Yogurt Filling:
- 452 g Nonfat Greek Yogurt (Fage)
- 30 ml Cold Brew Concentrate (Chameleon)
- 30 ml Sugar Free Syrup (Mrs Buttersworths)
Assembly:
- 30 ml Cold Brew Concentrate (Chameleon)
- 10 g Cacao Powder (Navitas Organics)
- 10 g Sea Salt Extra Dark Chocolate Bar (Gatsby)
Instructions
Crepes:
- In a large mixing bowl, add in your wet ingredients and whisk together until eggs have broke down.200 g (4) Large Brown Eggs, 640 ml (2.66 cups) Nonfat Milk, 120 ml (0.5 cups) Cold Brew Concentrate, 16 g (4 tsp) Vanilla Extract
- Then sift in the dry ingredients and mix until smooth. It’s okay if it’s a little lumpy as we will be straining it out.120 g (1 cups) Unbleached All-Purpose Flour, 60 g (0.5 cups) Vanilla Protein Powder
- Grab another large mixing bowl and place a mesh sieve on top. Pour the batter through and get rid of any lumps. The liquid should be runny and smooth.
- Spray a medium nonstick pan with olive oil and heat up on low to medium heat.Olive Oil Spray
- Use a ladle to pour about a 1/4th cup of the batter. Move the pan around to evenly coat the bottom. Cook until it bubbles and the edges start to come off.
- It should easily peel off. Flip and cook the other side for a few seconds and then add to a plate. Repeat until you use up all the batter.
- Now this part does take a bit of time but it’s worth it. I find it easy to pour in the batter and while it sits for a few minutes, clean the kitchen, be on my phone, etc. This part took me about an hour and made roughly 24 crepes.
Coffee Yogurt Filling:
- Mix your ingredients together in a medium bowl until smooth.452 g (2 cups) Nonfat Greek Yogurt, 30 ml (2 tbsp) Cold Brew Concentrate, 30 ml (2 tbsp) Sugar Free Syrup
Assembly:
- Now we build our cake. Lay down a crepe, brush on some cold brew, evenly spread a spoonful of the filling, and sprinkle coca powder. Repeat until you build the full cake.30 ml (2 tbsp) Cold Brew Concentrate, 10 g (2 tsp) Cacao Powder
- On the last layer, spread the last of the yogurt and add chocolate shavings evenly to the top.10 g (2 tsp) Sea Salt Extra Dark Chocolate Bar
