Ingredients

Egg Mixture:

  • 50 g Large Brown Egg (Vital Farms)
  • 92 g Egg Whites
  • 55 g Low Fat Cottage Cheese (Good Culture)
  • 10 g Calabrian Peppers (Tutto Calabria)
  • Salt & Pepper
  • Olive Oil Spray

Wrap:

  • 68 g Large Flour Tortilla (Trader Joeโ€™s)
  • 14 g Fat Free Mozzarella (H-E-B)
  • 14 g Fat Free Cheddar (H-E-B)
  • Handful of Spinach (chopped)
  • 5 Cherry Tomatoes (halved)

Toppings:

  • 20 g Avocado (sliced)
  • Fresh Cilantro (chopped)
  • Crushed Red Pepper

Instructions

Egg Mixture:

  • In a bowl, mix together all your ingredients besides the olive oil.
    50 g (1) Large Brown Egg, 92 g (6 tbsp) Egg Whites, 55 g (0.25 cups) Low Fat Cottage Cheese, 10 g (1 tsp) Calabrian Peppers, Salt & Pepper
  • Spray olive oil in a large flat pan and heat on medium. Pour out your mixture and let it set a little.

Wrap:

  • Once the top has started to set, place your large tortilla right on top and press down to let it stick to the egg.
    68 g (1) Large Flour Tortilla
  • 2-3 minutes later, carefully place a large lid on top and flip your wrap into it. Slide the wrap back into the pan to crisp up the bottom.
  • While it cooks, add your cheese and veggies to one half. After another 2-3 minutes, fold the other half over and press down.
    14 g (1 tbsp) Fat Free Mozzarella, 14 g (1 tbsp) Fat Free Cheddar, Handful of Spinach, 5 Cherry Tomatoes
  • Remove from heat and cut into 3 triangles. Add your toppings and enjoy!
    20 g (1.33 tbsp) Avocado, Fresh Cilantro, Crushed Red Pepper
