Breakfast Berry Crumble
Ingredients
Berries:
- 100 g Strawberries (cubed)
- 75 g Blueberries
- ¼ Lemon Wedge (juiced)
- ½ tsp Lemon Zest
- 3 g Tapioca Flour (Bob’s Red Mill or Cornstarch)
Crumble:
- 40 g Old Fashioned Oats (H-E-B)
- 14 g Unflavored Protein Powder (Quest)
- 8 g Walnuts (chopped)
- 7 g Powdered Peanut Butter (PB2)
- ½ tsp Cinnamon
- 1 tsp Vanilla Extract
- 15 ml Sugar Free Syrup (Mrs Butterworths)
- 15 ml Protein Plant Milk (Good Karma)
To Top:
- 85 g Plain Nonfat Greek Yogurt (Siggi’s)
- Pinch of Cinnamon
Instructions
Berries:
- Wash and prep your berries and add to a microwave safe bowl.100 g (0.75 cups) Strawberries, 75 g (0.5 cups) Blueberries
- Add in the remaining ingredients and mix well.1/4 Lemon Wedge, 1/2 tsp Lemon Zest, 3 g (1 tsp) Tapioca Flour
- Microwave for 2 minutes. This will get them nice and soft and jammy.
Crumble:
- Meanwhile, add your crumble ingredients to another bowl. Do the dry ingredients first and give it all a good mix.40 g (0.5 cups) Old Fashioned Oats, 14 g (1.5 tbsp) Unflavored Protein Powder, 8 g (1 tbsp) Walnuts, 7 g (1 tbsp) Powdered Peanut Butter, 1/2 tsp Cinnamon
- Then add in the wet and mix until it’s a nice semi-sticky/crumbly texture.1 tsp Vanilla Extract, 15 ml (1 tbsp) Sugar Free Syrup, 15 ml (1 tbsp) Protein Plant Milk
Bake:
- In an oven safe dish, add your warm gooey berries to the bottom. Then top off with your crumble in a nice and even layer.
- Bake at 350° for 18-20 minutes or until the top is golden brown.
To Top:
- Meanwhile, I like to add my yogurt to a bowl and give it a good mix with a spoon. This gives it a creamier and lighter texture. You can also mix in with some vanilla or syrup for a sweeter taste.85 g (0.33 cups) Plain Nonfat Greek Yogurt
- Once baked, top with your yogurt and some cinnamon.Pinch of Cinnamon
- Be careful as it will be very hot. So proceed with caution and enjoy!
