Ingredients
Bowl:
- 25 g Original Lentil Blend Rice (RightRice)
- 82.5 g Beefless Ground Beef (Trader Joe’s)
- 5 g Spicy Taco Seasoning (Siete Foods)
- 20 g Lettuce (chopped)
- 20 g Spinach (chopped)
- 30 g No Salt Added Black Beans
- 28 g Mexican Farmstyle Shreds Cheese (Tillamook)
Yogurt Dip:
- 56 g Nonfat Greek Yogurt (Siggi’s)
- 1 tbsp Chipotle Hot Sauce (Tia Lupita)
- 2-3 tbsp Water
To Serve:
- Fresh Cilantro (chopped)
- Lime Juice
Instructions
Bowl:
- Cook your RightRice according to package instructions. Set aside.25 g (2 tbsp) Original Lentil Blend Rice
- Add your beefless crumbles to a pan on medium heat and sauté with your taco seasoning for 3-5 minutes. Set aside.82.5 g (3 oz) Beefless Ground Beef, 5 g (2 tsp) Spicy Taco Seasoning
- In a bowl, lay down your greens and top with your rice, “beef”, black beans, and your cheese.20 g (0.25 cups) Lettuce, 20 g (0.25 cups) Spinach, 30 g (1 oz) No Salt Added Black Beans, 28 g (2 tbsp) Mexican Farmstyle Shreds Cheese
Yogurt Dip:
