Ingredients

Bowl:

  • 25 g Original Lentil Blend Rice (RightRice)
  • 82.5 g Beefless Ground Beef (Trader Joeโ€™s)
  • 5 g Spicy Taco Seasoning (Siete Foods)
  • 20 g Lettuce (chopped)
  • 20 g Spinach (chopped)
  • 30 g No Salt Added Black Beans
  • 28 g Mexican Farmstyle Shreds Cheese (Tillamook)

Yogurt Dip:

  • 56 g Nonfat Greek Yogurt (Siggiโ€™s)
  • 1 tbsp Chipotle Hot Sauce (Tia Lupita)
  • 2-3 tbsp Water

To Serve:

  • Fresh Cilantro (chopped)
  • Lime Juice

Instructions

Bowl:

  • Cook your RightRice according to package instructions. Set aside.
    25 g (2 tbsp) Original Lentil Blend Rice
  • Add your beefless crumbles to a pan on medium heat and sautรฉ with your taco seasoning for 3-5 minutes. Set aside.
    82.5 g (3 oz) Beefless Ground Beef, 5 g (2 tsp) Spicy Taco Seasoning
  • In a bowl, lay down your greens and top with your rice, โ€œbeefโ€, black beans, and your cheese.
    20 g (0.25 cups) Lettuce, 20 g (0.25 cups) Spinach, 30 g (1 oz) No Salt Added Black Beans, 28 g (2 tbsp) Mexican Farmstyle Shreds Cheese

Yogurt Dip:

  • In a small bowl, add in your yogurt, hot sauce, and some water. Mix until you get desired consistency.
    56 g (0.25 cups) Nonfat Greek Yogurt, 1 tbsp Chipotle Hot Sauce, 2-3 tbsp Water
  • Add that to the top of your burrito bowl.

To Serve:

  • Top your burrito bowl off with some fresh cilantro and lime juice. Mix everything up and enjoy!
