Strawberry Sweet Rolls
Ingredients
Strawberry Filling:
- 200 g Strawberries (cubed)
- 7 g Unflavored Protein Powder (Quest)
- 16 g Zero Calorie Sweetener (H-E-B)
- 7.5 g Tapioca Flour (Bob’s Red Mill – or cornstarch)
Dough:
- 120 g Self Rising Flour (King Arthur)
- 15 g Unflavored Protein Powder (Quest)
- 170 g Plain Nonfat Greek Yogurt (Siggi’s)
- 15 g Self Rising Flour for kneading (King Arthur)
Strawberry Cream Cheese Icing:
- 57 g Reduced Fat Cream Cheese (Philadelphia)
- 2 tbsp Strawberry Filling
- 15 g Powdered Sugar (Whole Foods)
Instructions
Strawberry Filling:
- Prep your strawberries and add to a small pot on low heat.200 g (1.5 cups) Strawberries
- Sprinkle in the protein powder and sugar combo and give it a good stir.7 g (1 tbsp) Unflavored Protein Powder, 16 g (4 tsp) Zero Calorie Sweetener
- After 5-6 minutes, once the strawberries have softened, add in your tapioca flour/cornstarch to let it thicken.7.5 g (1 tbsp) Tapioca Flour
- Once it’s soft and jelly like, remove from heat and allow to cool while you prep the dough.
Dough:
- Preheat oven to 350°.
- In a mixing bowl, add in your flour and protein powder. Give it a quick mix.120 g (1 cups) Self Rising Flour, 15 g (2 tbsp) Unflavored Protein Powder
- Add in your yogurt and mix together with a spoon. It should turn into a crumbly texture.170 g (0.75 cups) Plain Nonfat Greek Yogurt
- Grab some flour for kneading and dust your countertop. Pour out the dough and start to bring the pieces together and knead until a dough forms. This should take roughly 3-4 minutes.15 g (2 tbsp) Self Rising Flour for kneading
- Flour your rolling pin and start to shape your dough into a rectangle. Flour as you go to ensure the dough doesn’t stick to your surface.
- Once your filling has cooled, add to the center, leaving about 2 tbsps worth behind for your icing.
- Spread into an even layer. Then start to roll up the short edge of your dough tightly and carefully.
- Once it’s a log shape, cut into 6 even pieces and add to a baking sheet.
- Bake at 350° for 20-25 minutes or until tops start to get a brown color.
Strawberry Cream Cheese Icing:
- While your rolls bake, add your icing ingredients to another mixing bowl.57 g (2 oz) Reduced Fat Cream Cheese, 2 tbsp Strawberry Filling, 15 g (2 tbsp) Powdered Sugar
- Use a hand mixer or a whisk to mix everything together until nice and smooth.
To Serve:
- Once your rolls have cooked, allow them to cool. Then evenly spread on your icing.
- Grab a piece and enjoy!
