Spicy Kimchi Grilled Cheese
Ingredients
Kimchi:
- Olive Oil Spray
- 84 g Classic Spicy Kimchi (Cleveland)
Sandwich:
- 4 g Light Butter (Smart Balance)
- 2 slices Seeded Protein Bread (Higher Harvest by H-E-B)
- 42 g Reduced Fat Swiss Cheese (Jalsberg)
- 28 g Fat Free Cheddar (H-E-B)
To Serve:
- Green Onions (sliced)
Instructions
Kimchi:
- In a medium pan, add in your olive oil spray and cook your kimchi on medium heat until most of the water is released.Olive Oil Spray, 84 g (2 oz) Classic Spicy Kimchi
- Set aside in a bowl and add water to the pan and wipe with paper towels to clean it out.
Sandwich:
- Then add your butter to the same pan and add your bread slices and coat front and back in the butter. Let one side get nice and brown. Turn down the heat to low.4 g (2 tsp) Light Butter, 2 slices Seeded Protein Bread
- Flip over and add in your cheese to each slice and kimchi to just one.42 g (1.5 oz) Reduced Fat Swiss Cheese, 28 g (2 tbsp) Fat Free Cheddar
- Cover the pan with a lid to let the cheese melt.
- Once it looks melty enough, flip the slice of bread without kimchi onto the other one and press down to seal it in.
