If you’re a fan of café-style breakfast sandwiches, but you want a more macro-friendly version, this one’s for you. It’s inspired by a trip to Portland where I had the best bagel sandwich of my life. After recreating it at home with some tweaks, I can confidently say this might be even better.

Spicy Bagel Breakfast Sandwich
Ingredients
Egg Patty:
- 1 Large Brown Egg (Vital Farms)
- 62 g Egg Whites
- Salt & Pepper
- Olive Oil Spray
Spicy Cream Cheese Filling:
- 14 g Neufchatel Cheese (Philadelphia)
- 56 g Plain Nonfat Greek Yogurt (Siggi’s)
- 10 g Crushed Calabrian Peppers (Tutto Calabria)
Sandwich:
- 30 g Avocado Slices
- 1 Everything Bagel (Dave’s Killer Bagels)
Instructions
Egg Patty:
- In a small bowl, whisk together your egg and egg whites until frothy. Season with salt & pepper, to taste.1 Large Brown Egg, 62 g (0.25 cups) Egg Whites, Salt & Pepper
- In a small pan on low heat, spray olive oil and add in a silicone ring, mason jar, or crumpet ring. This is to make your egg patty. (Alternately you can just cook the egg like normal and fold it to fit your bagel.)Olive Oil Spray
- Spray the inside with oil as well. Pour in your egg mixture and cover to let the top cook. Once it starts to solidify, carefully remove the ring and flip it over.
Spicy Cream Cheese Filling:
- In another small mix together your three ingredients until smooth.14 g (0.5 oz) Neufchatel Cheese, 56 g (0.25 cups) Plain Nonfat Greek Yogurt, 10 g (2 tsp) Crushed Calabrian Peppers
Sandwich:
- Slice your avocado and toast up your bagel to your liking.30 g (1 oz) Avocado Slices, 1 Everything Bagel
- Assemble everything together and wrap in parchment paper for easy cutting. Slice in half and then enjoy. It’s a messy one but so good!
