Roasted Tomato Soup and Grilled Cheese
Ingredients
Roasted Tomato Soup:
- 3 Roma Tomatoes
- 140 g Red Bell Pepper
- 140 g Red Onion
- 1 Garlic Bulb
- 15 ml Olive Oil
- Salt & Pepper
- Dried Parsley
- Dried Basil
- 6 oz can Tomato Sauce
- 200 ml Vegetable Broth
- 110 g Low Fat Cottage Cheese (Good Culture)
- 60 ml Unsweetened Protein Plant Milk (Good Karma)
Grilled Cheese:
- Olive Oil Spray
- 6 slices Protein Bread (H-E-B)
- 6 slices Reduced Fat American Cheese (Kraft)
- 42 g Fat Free Mozzarella Cheese (H-E-B)
To Top (optional):
- 55 g Low Fat Cottage Cheese (Good Culture)
- 20 ml Protein Plant Milk (Good Karma)
Instructions
Tomato Soup:
- Roughly chop your veggies and add to a baking sheet. Cover with oil and seasonings. Air roast at 425° for 20 mins.3 (0.75 cups) Roma Tomatoes, 140 g (1 cups) Red Bell Pepper, 140 g (1 cups) Red Onion, 1 Garlic Bulb, 15 ml (1 tbsp) Olive Oil, Salt & Pepper, Dried Parsley, Dried Basil
- Then add to a large pot (make sure to get all the garlic out from the bulb) with your tomato sauce and broth. Simmer for 20 minutes.6 oz (0.75 cups) can Tomato Sauce, 200 ml (0.75 cups) Vegetable Broth
- Meanwhile, take your cottage cheese and blend with milk until smooth.110 g (0.5 cups) Low Fat Cottage Cheese, 60 ml (0.25 cups) Unsweetened Protein Plant Milk
- Carefully add your veggies to a large blender and blend till smooth. Then add in the blended cottage cheese and blend again.
- Taste test and add more salt & pepper as needed.
- Add it back to your large pot and let it cook on low heat while you make your grilled cheese.
Grilled Cheese:
- In a grill pan, spray some olive oil. Add in a slice of bread and top with your sliced and shredded cheese.Olive Oil Spray, 6 slices Protein Bread, 6 slices Reduced Fat American Cheese, 42 g (0.33 cups) Fat Free Mozzarella Cheese
- Top with second slice and cook until golden brown on both sides.
To Top:
- Blend the remaining cottage cheese and milk for topping your soup. Cut your grilled cheese in half, dip into one serving of soup with one serving of cream, and enjoy!55 g (0.25 cups) Low Fat Cottage Cheese, 20 ml (2 tsp) Protein Plant Milk
