Peaches and Cream Stuffed French Toast
Ingredients
Caramelized Peaches:
- 4 g Unsalted Butter (Vital Farms)
- 150 g Yellow Peach (sliced)
- 16 g Sugar Free Brown Sugar (H-E-B)
- ½ tsp Cinnamon
French Toast:
- 57 g Reduced Fat Cream Cheese (Philadelphia)
- 30 g Powdered Sugar (Whole Foods)
- 8 slices Low Carb Seeded Bread (Higher Harvest by H-E-B)
- 1 Large Brown Egg (Vital Farms)
- 60 ml Unsweetened Protein Plan Milk (Good Karma)
- ½ tsp Cinnamon
- Olive Oil Spray
Yogurt Whip:
- 112 g Plain Nonfat Greek Yogurt (Siggi’s)
- 7 ml Sugar Free Syrup (Mrs. Butterworths)
- ¼ tsp Vanilla Extract
To Serve:
- Sprinkle of Powdered Sugar
- 30 ml Sugar Free Syrup (Mrs. Butterworths)
Instructions
Caramelized Peaches:
- Prep your peach. I used 1 whole peach for the suggested serving.150 g (1 cups) Yellow Peach
- In a small pot, bring to low heat and melt your butter.4 g (1 tsp) Unsalted Butter
- Then add in the sliced peaches and coat in your sugar cinnamon mixture.16 g (4 tsp) Sugar Free Brown Sugar, 1/2 tsp Cinnamon
- Let your peaches cook low and slow while you prep everything else.
French Toast:
- In a small bowl, whisk together your cream cheese and powdered sugar. Add a splash of milk if it’s too clumpy.57 g (2 oz) Reduced Fat Cream Cheese, 30 g (3 tbsp) Powdered Sugar
- Then grab your slices of bread. This recipe makes 2 servings so you’ll use 4 slices and make 2 sandwiches for each.8 slices Low Carb Seeded Bread
- Add your cream cheese to a slice and cover with second and you’ve got a sandwich. Repeat for all sandwiches.
- In a shallow bowl or glass dish, crack in your egg, pour in your milk, and season with cinnamon. Give everything a good whisk.1 Large Brown Egg, 60 ml (0.25 cups) Unsweetened Protein Plan Milk, 1/2 tsp Cinnamon
- Grab a medium pan and spray with olive oil. Keep on low to medium heat.Olive Oil Spray
- Dunk each sandwich into your French toast mixture and evenly coat but don’t leave in there for too long otherwise it will get soggy.
- Cook until golden brown on each side. Again, repeat for all and set aside.
Yogurt Whip:
- In a small bowl, mix together your yogurt whip ingredients until nice and smooth.112 g (0.5 cups) Plain Nonfat Greek Yogurt, 7 ml (0.5 tbsp) Sugar Free Syrup, 1/4 tsp Vanilla Extract
To Serve:
- Add one French toast sandwich to a plate. Spread a thin layer of your yogurt whip and top with another sandwich. (This recipe makes 2 servings so keep in mind to only use up half of the yogurt for each serving.)
- Add the remaining yogurt for one serving and top with half of your caramelized peaches.
- Sprinkle the top with powdered sugar and a drizzle of sugar free syrup. Then dig in!Sprinkle of Powdered Sugar, 30 ml (2 tbsp) Sugar Free Syrup
- Repeat for your second serving or save that for later which is what I did!
