These maple pecan cinnamon rolls bring all the comfort of a pecan pie, but in roll form. Youโ€™ll love the warm layers filled with a rich maple pecan filling thatโ€™s sweet, crunchy, and perfectly spiced. Topped with a smooth maple cream cheese icing and sprinkled with extra pecans, these rolls are absolutely heavenly.

Best of all, no complicated steps or yeast proofing here. You start with an easy Greek yogurt dough that comes together in minutes. Just knead, roll out, and spread on that delicious filling before rolling up and slicing into 6 beautiful rolls. Pop them in a baking dish, add a splash of milk to keep them soft, and bake until golden and pillowy.

Ingredients

Maple Pecan Filling:

  • 14 g Light Flaxseed Oil Butter (Smart Balance)
  • 15 ml Dark Amber Maple Syrup (Whole Foods)
  • 15 g Unflavored Whey Casein Protein Powder (Naked Nutrition)
  • 16 g Zero Calorie Brown Sugar Sweetener (H-E-B)
  • 1 tsp Cinnamon
  • 20 g Pecans (finely chopped)

Cinnamon Roll Dough:

  • 170 g Plain Nonfat Greek Yogurt (Siggiโ€™s)
  • 126 g Self Rising Flour (King Arthur)
  • 30 g Unflavored Whey Casein Protein Powder (Naked Nutrition)
  • 8 g Zero Calorie Brown Sugar Sweetener (H-E-B)
  • Pinch of Salt
  • ยฝ tsp Baking Powder
  • ยผ tsp Baking Soda

Prep:

  • 14 g Self Rising Flour (for kneading (King Arthur))
  • 15 ml Unsweetened Plain Plant Milk (Good Karma)

Maple Cream Cheese Icing:

  • 28 g Reduced Fat Cream Cheese (Philadelphia)
  • 15 g Powdered Monkfruit or Regular Sugar (Lakanto)
  • 15 ml Dark Amber Maple Syrup (Whole Foods)

To Top:

  • 10 g Pecans (finely chopped)

Instructions

Maple Pecan Filling:

  • Add all your ingredients together (besides pecans) in a mixing bowl and mix until smooth. Set aside.
    14 g (1 tbsp) Light Flaxseed Oil Butter, 15 ml (1 tbsp) Dark Amber Maple Syrup, 15 g (1 tbsp + 2 tsp) Unflavored Whey Casein Protein Powder, 16 g (4 tsp) Zero Calorie Brown Sugar Sweetener, 1 tsp Cinnamon

Cinnamon Roll Dough:

  • In a large mixing bowl, add in your ingredients and mix with a spoon.
    170 g (0.75 cup) Plain Nonfat Greek Yogurt, 126 g (1.25 cups) Self Rising Flour, 30 g (3 tbsp) Unflavored Whey Casein Protein Powder, 8 g (2 tsp) Zero Calorie Brown Sugar Sweetener, Pinch of Salt, 1/2 tsp Baking Powder, 1/4 tsp Baking Soda
  • Then flour your counter and pour out the dough. Start to knead it with your hands until incorporated into a dough. It shouldnโ€™t be super sticky. Add more flour, 1 tbsp at a time if itโ€™s sticking to your fingers.
  • Lay down a large parchment paper and add some of your kneading dough to it. Dust a rolling pin as well and start to roll it out into a nice even rectangle shape.
    14 g (1 tbsp) Self Rising Flour

Assemble:

  • Preheat oven to 350ยฐ.
  • Spread your filling evenly onto your dough until smooth. Evenly sprinkle in your pecans.
    20 g (2 tbsp) Pecans
  • Then start to roll it in into a log shape from the short end. Once rolled pull on the ends and roll a little to create a more even log.
  • Cut off the scraps at the ends and then cut the log into an even 6 pieces.
  • Place each into a small baking sheet sprayed with olive oil. Pour over your milk evenly to all.
    15 ml (1 tbsp) Unsweetened Plain Plant Milk
  • Bake for 18-20 mins until golden brown.

Maple Cream Cheese Icing:

  • While your cinnamon rolls bake, add your icing ingredients to a small bowl. Use a whisk or handheld mixer to get it nice and smooth.
    28 g (1 oz) Reduced Fat Cream Cheese, 15 g (1 tbsp) Powdered Monkfruit or Regular Sugar, 15 ml (1 tbsp) Dark Amber Maple Syrup
  • Once your cinnamon rolls have cooked, let them cool for at least 10-15 minutes before icing.
  • Sprinkle with your chopped pecans and enjoy!
    10 g (1 tbsp) Pecans
