High Protein Strawberry Cheesecake
Ingredients
Cheesecake:
- 110 g Low Fat Cottage Cheese (Good Culture)
- 113 g Nonfat Greek Yogurt (Siggi’s)
- 1 Large Brown Egg (Vital Farms)
- 28 g Unflavored Protein Powder (Quest)
- 8 g Zero Calorie Sweetener (H-E-B – can omit if using flavored protein powder)
- 6 g Sugar Free Vanilla Instant Pudding Mix (Simply Delish)
- ½ Lemon (juiced)
- ½ tsp Lemon Zest
Crust:
- 4 Honey Graham Crackers (Baker’s Harvest)
- 30 ml Sugar Free Syrup (Mrs Butterworths)
Topping:
- 2 Large Strawberries (cubed)
Instructions
Cheesecake:
- Add all your ingredients to a blender and blend until smooth.110 g (0.5 cups) Low Fat Cottage Cheese, 113 g (0.5 cups) Nonfat Greek Yogurt, 1 Large Brown Egg, 28 g (0.25 cups) Unflavored Protein Powder, 8 g (2 tsp) Zero Calorie Sweetener, 6 g (2 tsp) Sugar Free Vanilla Instant Pudding Mix, 1/2 Lemon, 1/2 tsp Lemon Zest
Crust:
- Grab two mini pie tins (mine were 4” in diameter) and crush up 2 graham crackers into each.4 Honey Graham Crackers
- Add in 15ml of your maple syrup into each and mix until smooth. Flatten to form an even layer.30 ml (2 tbsp) Sugar Free Syrup
Assembly:
- Pour in half of your cheesecake batter into each tin. Shake to flatten and even out.
Topping:
- Finally, add in your cubed strawberries to the top of each.2 Large Strawberries
Bake:
- Bake at 325° for 20-25 minutes. Use a toothpick to make sure the middle is fully done.
- Cut into wedges and sprinkle with powdered sugar!
