Grilled Cheese Chipotle Burrito
Ingredients
Burrito:
- 25 g Original Lentil Blend Rice (RightRice)
- 55 g Beefless Ground Beef (Trader Joe’s)
- 2.5 g Spicy Taco Seasoning (Siete Foods)
- 1 Large Flour Tortilla (Trader Joe’s)
- 20 g Lettuce (chopped)
- 50 g No Salt Added Black Beans
- 28 g Lite Mexican Shredded Cheese (Trader Joe’s)
Yogurt Dip:
- 28 g Nonfat Greek Yogurt (Siggi’s)
- ½ tbsp Chipotle Hot Sauce (Tia Lupita)
- 1-2 tbsp Water
To Serve:
- 30 g Hot Fire Roasted Salsa (Arriba!)
- Fresh Cilantro (chopped)
Instructions
Burrito:
- Cook your RightRice according to package instructions.25 g (2 tbsp) Original Lentil Blend Rice
- Add your beefless crumbles to a pan on medium heat and sauté with your taco seasoning for 3-5 minutes.55 g (2 oz) Beefless Ground Beef, 2.5 g (1 tbsp) Spicy Taco Seasoning
- To your large flour tortilla, lay down lettuce, your rice, “beef”, and black beans. You can add in your salsa here too but I was worried it would make it too soggy so I saved it for the end.1 Large Flour Tortilla, 20 g (0.25 cups) Lettuce, 50 g (0.33 cups) No Salt Added Black Beans
- Carefully wrap it up tightly like a burrito.
- To your pan, add a line of cheese and let it get a little melty. Then place the burrito with the seam down.28 g (2 tbsp) Lite Mexican Shredded Cheese
- Let the cheese coat the edge and stick to it. You can grab your spatula and bring the cheese up to the sides of your burrito (see reference video).
- Keep moving the burrito around a little to prevent the cheese from sticking to the pan. After 3-4 minutes, flip it over and let the other side brown. Keep cooking until it looks nice and crispy all around.
Yogurt Dip:
- While that cooks, you can prep your yogurt dip. In a small bowl, add in your yogurt, hot sauce, and some water. Mix until you get desired consistency.28 g (2 tbsp) Nonfat Greek Yogurt, 1/2 tbsp Chipotle Hot Sauce, 1-2 tbsp Water
To Serve:
