Ingredients
French Toast:
- 1 Large Brown Egg (Vital Farms)
- 30 ml Light Eggnog (H-E-B)
- 1 tsp Vanilla Bean (Neilson Massey)
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- 3 slices Seeded Sugar Free Wheat Bread (Natures Own)
- Olive Oil Spray
Eggnog Cream:
- 85 g Plain Nonfat Greek Yogurt (Siggi’s)
- 60 ml Light Eggnog (H-E-B)
- 6 g Sugar Free Vanilla Instant Pudding Mix (Simply Delish)
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
To Serve:
- 15 ml Sugar Free Syrup (Mrs Butterworths)
- 10 g Fat Free Whipped Cream (Reddi Whip)
- Sprinkle of Powdered Sugar
Instructions
French Toast:
- In a shallow dish, mix together your egg, eggnog, spices, and vanilla.1 Large Brown Egg, 30 ml (2 tbsp) Light Eggnog, 1 tsp Vanilla Bean, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg
- Then heat a pan on medium heat with spray olive oil.Olive Oil Spray
- Dip a slice of bread in your french toast mixture and coat in each side. Add to your pan and cook golden brown on each side. Repeat for all 3 slices.3 slices Seeded Sugar Free Wheat Bread
Eggnog Cream:
- In a mixing bowl, add in all your ingredients and whisk until a smooth cream forms.85 g (0.33 cup) Plain Nonfat Greek Yogurt, 60 ml (0.25 cups) Light Eggnog, 6 g (1 tsp) Sugar Free Vanilla Instant Pudding Mix, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg
To Serve:
- Layer your slices of french toast together with the eggnog cream in between.
- Add in another dollop on top of the last slice and drizzle with syrup.15 ml (1 tbsp) Sugar Free Syrup
