Ingredients

Pistachio Filling:

  • 13 g Kadayik (Alkis)
  • 14 g Pistachio Paste (Gusto Etna)

Ganache:

  • 27 g Sea Salt Dark Chocolate Bar (Gatsby)
  • 15 ml Fat Free Milk (Mootopia)

Waffle:

  • 50 g Large Brown Egg (Vital Farms)
  • 85 g 0% Milkfat Yogurt (Fage)
  • 30 ml Fat Free Milk (Mootopia)
  • 20 g All Purpose Flour (King Arthur)
  • 15 g Vanilla Protein Powder (Quest)
  • Pinch of Salt
  • 1 tsp Baking Powder

Topping:

  • 7 g Sweet Cinnamon Pistachios (Wonderful)

Instructions

Pistachio Filling:

  • Spray some olive oil in a nonstick pan and bring to medium heat. Add your shredded filo in and toast for 5-6 minutes until they start to brown. Remove from heat.
    13 g (0.25 cup) Kadayik
  • Add in your pistachio paste and mix everything together. Set aside.
    14 g (1 tbsp) Pistachio Paste

Ganache:

  • In a small bowl, add your chocolate and milk. Microwave for just 15 seconds to let it soften and mix so itโ€™s smooth.
    27 g (0.33 bar) Sea Salt Dark Chocolate Bar, 15 ml (1 tbsp) Fat Free Milk

Waffle:

  • In a medium mixing bowl, add in all of your ingredients for the waffle and mix.
    50 g (1) Large Brown Egg, 85 g (0.33 cups) 0% Milkfat Yogurt, 30 ml (2 tbsp) Fat Free Milk, 20 g (2.66 tbsp) All Purpose Flour, 15 g (1.5 tbsp) Vanilla Protein Powder, Pinch of Salt, 1 tsp Baking Powder
  • Grab your walled iron and spray the plates lightly with olive oil. Once itโ€™s heated up, pour in the batter and shut the lid. Let it cool according to your appliance instructions.
  • Open the lid and spread 2/3 your ganache on one half. Top evenly with the pistachio filling. Fold over the other half and press down with the lid of the iron.

Topping:

  • Pour over the remaining ganache and sprinkle with chopped pistachios for crunch. Cut in half and enjoy like a sandwich!
