Crispy Miso Tofu with Noodles
Ingredients
Miso Tofu:
- 170 g Extra-Firm Tofu (Hodo)
- 60 ml Low Sodium Soy Sauce (Sprout’s)
- 30 g Miso Paste (Miso Master)
- ¼ Lime Wedge
- 30 g Tapioca Flour (Bob’s Red Mill)
- 8 g Nutritional Yeast (Bragg)
- 2 tsp Lime Zest
- 1 tbsp Toasted Sesame Seeds
- 2 tsp Crushed Red Pepper
- 1 tbsp Avocado Oil
Noodles:
- 113 g Angel Hair Protein Pasta (Barilla)
- 170 g Frozen Baby Broccoli
- 85 g Frozen Fajita Vegetables
- 1 tsp Ginger (minced)
- 2 tsp Garlic (minced)
To Top:
- Fresh Cilantro (chopped)
- Lime Juice
- Toasted Sesame Seeds
Instructions
Noodles:
- Cook your noodles according to package instructions. Drain, rinse, and set aside.113 g (4 oz) Angel Hair Protein Pasta
Miso Tofu:
- Start off by patting your block of tofu dry, no need to press if using extra firm.170 g (6 oz) Extra-Firm Tofu
- Carefully cut 3-4 equal slices lengthwise. I used 3/4 slices (weighing roughly 170g) for this recipe but feel free to use all!
- Diagonally score each slice about halfway through, be careful not to cut all the way through.
- In a small bowl, mix together your soy sauce, miso paste, and lime juice until fully dissolved.60 ml (0.25 cups) Low Sodium Soy Sauce (Sprout’s), 30 g (2 tbsp) Miso Paste (Miso Master), 1/4 Lime Wedge
- Then pour on top of your tofu slices. Flip them over and let it all coat well and marinate while you make your coating.
- In a shallow bowl, mix your tapioca flour, nutritional yeast, lime zest, toasted sesame seeds, and crushed red pepper.30 g (0.25 cups) Tapioca Flour (Bob’s Red Mill), 8 g (4 tsp) Nutritional Yeast, 2 tsp Lime Zest, 1 tbsp Toasted Sesame Seeds, 2 tsp Crushed Red Pepper
- Add your tofu slices and coat well front and back until all the mixture is used up.
- Heat up your nonstick pan on medium heat and add avocado oil. Once it warms up, add the tofu slabs and hear that sizzle. Get it nice and crispy on both sides.1 tbsp Avocado Oil
Veggies:
- Set aside and add in your frozen veggies, ginger, and garlic. Give a quick sauté for a few minutes until veggies soften.170 g (2 cups) Frozen Baby Broccoli, 85 g (0.5 cups) Frozen Fajita Vegetables, 1 tsp Ginger, 2 tsp Garlic
- Add in your cooked noodles and any remaining tofu marinade. Give everything a quick toss.
To Serve:
