Ingredients

Eggs:

  • Olive Oil Spray
  • 1 Whole Brown Egg (Vital Farms)
  • 46 g Liquid Egg Whites
  • 32 g Spinach
  • Salt & Pepper (to taste)

Sandwich:

  • 102 g Challah Bread (Trader Joeโ€™s)
  • 42 g Reduced Fat Swiss Cheese (Jalsberg)

Instructions

Eggs:

  • To a pan on medium heat, add your olive oil spray.
    Olive Oil Spray
  • Once warm, crack in your egg and add in the liquid egg whites.
    1 Whole Brown Egg, 46 g (3 tbsp) Liquid Egg Whites
  • Scramble for a couple seconds and then add in your spinach to let it wilt.
    32 g (1 cups) Spinach
  • Season with salt & pepper and cook until eggs have fully cooked and are fluffy. Set aside.
    Salt & Pepper

Sandwich:

  • Grab two slices of bread and add to the same pan and toast up the insides of the bread.
    102 g Challah Bread
  • After a few seconds, flip it over to cook the outsides. Add a slice of cheese to the inside of each slice. Cover with a lid to let the cheese melt.
    42 g (1.5 oz) Reduced Fat Swiss Cheese
