Ingredients
Eggs:
- Olive Oil Spray
- 1 Whole Brown Egg (Vital Farms)
- 46 g Liquid Egg Whites
- 32 g Spinach
- Salt & Pepper (to taste)
Sandwich:
- 102 g Challah Bread (Trader Joe’s)
- 42 g Reduced Fat Swiss Cheese (Jalsberg)
Instructions
Eggs:
- To a pan on medium heat, add your olive oil spray.Olive Oil Spray
- Once warm, crack in your egg and add in the liquid egg whites.1 Whole Brown Egg, 46 g (3 tbsp) Liquid Egg Whites
- Scramble for a couple seconds and then add in your spinach to let it wilt.32 g (1 cups) Spinach
- Season with salt & pepper and cook until eggs have fully cooked and are fluffy. Set aside.Salt & Pepper
Sandwich:
- Grab two slices of bread and add to the same pan and toast up the insides of the bread.102 g Challah Bread
