Apple Pie French Toast Casserole
Ingredients
French Toast Base:
- 60 ml Low Fat Buttermilk (Whole Foods)
- 120 ml Protein Plant Milk (Good Karma)
- 2 Whole Large Eggs (Vital Farms)
- 15 g Unflavored Whey Protein Powder (Isopure)
- 30 ml Sugar Free Syrup (Mrs Butterworths)
- 1 tsp Vanilla Extract
- 1 tsp Apple Pie Spice
- Pinch of Salt
- 8 slices of Protein Seeded Bread (cubed, H-E-B)
- 100 g Granny Smith Apples (cubed)
- 30 g Gala Apples (cubed)
Vanilla Pudding Custard:
- 120 ml Low Fat Buttermilk (Whole Foods)
- 7 g Unsalted Butter (Vital Farms)
- 7 g Unflavored Whey Protein Powder (Isopure)
- 6 g Sugar Free Vanilla Instant Pudding Mix (Simply Delish)
To Top:
- Sprinkle of Powdered Sugar
- 15 ml Sugar Free Syrup (Mrs Butterworths)
- 10 g Fat Free Whipped Cream (Reddi Whip)
- Apple Pie Spice
Instructions
- Preheat oven to 350°.
French Toast Base:
- In a large bowl, add in all of your ingredients besides the cubed bread and apples. Whisk until smooth.60 ml (0.25 cups) Low Fat Buttermilk, 120 ml (0.5 cups) Protein Plant Milk, 2 Whole Large Eggs, 15 g (1.5 tbsp) Unflavored Whey Protein Powder, 30 ml (2 tbsp) Sugar Free Syrup, 1 tsp Vanilla Extract, 1 tsp Apple Pie Spice, Pinch of Salt
- Then toss in your bread and cubed apples. Mix until the bread is evenly coated.8 slices of Protein Seeded Bread, 100 g (0.75 cups) Granny Smith Apples, 30 g (0.25 cups) Gala Apples
- Pour the mixture into a lightly oil sprayed baking dish. Even it out and then bake for 25-30 minutes.
Lemon Pudding Custard:
- Meanwhile, add in your sauce ingredients to a small pot. Simmer on low heat while continuously whisking.120 ml (0.5 cups) Low Fat Buttermilk, 7 g (0.5 tbsp) Unsalted Butter, 7 g (1 tbsp) Unflavored Whey Protein Powder, 6 g (2 tsp) Sugar Free Vanilla Instant Pudding Mix
- Keep at a low simmer and whisk until the bread base is done.
Assembly:
