Apple Cider French Toast
Ingredients
Apple Cider:
- 30 g Unsweetened Apple Sauce (Trader Joe’s)
- 3-4 tbsp Water
- ¼ tsp Cinnamon
- Pinch of Nutmeg
Yogurt Topping:
- 75 g Plain Nonfat Greek Yogurt (Siggi’s)
- ½ of Apple Cider
- 15 g Unflavored Whey Casein Protein Powder (Naked Nutrition)
- 6 g Sugar Free Vanilla Instant Pudding Mix (Simply Delish)
- 1 tsp Vanilla Extract
French Toast:
- 15 g Egg Whites
- 15 ml Unsweetened Protein Plant Milk (Good Karma)
- ½ of Apple Cider
- 1 tsp Vanilla Extract
- 67 g Challah Bread (sliced)
- Olive Oil Spray
Cinnamon Sugar:
- 8 g Zero Calorie Sweetener (H-E-B)
- ½ tsp Cinnamon
Instructions
Apple Cider:
- In a small pan, add in your apple sauce and water. Bring to a low simmer and add in your spices.30 g (2 tbsp) Unsweetened Apple Sauce, 3-4 tbsp Water, 1/4 tsp Cinnamon, Pinch of Nutmeg
- Whisk and warm up for a 2-3 minutes. Then set aside.
Yogurt Topping:
- In a mixing bowl, add in your yogurt and half of your apple cider. Give it a quick mix.75 g (0.25 cup) Plain Nonfat Greek Yogurt, 1/2 of Apple Cider
- Then add in your protein powder, pudding mix, and vanilla. Whisk until it thickens. Put it in the fridge to let it cool and set.15 g (1.5 tbsp) Unflavored Whey Casein Protein Powder, 6 g (1 tsp) Sugar Free Vanilla Instant Pudding Mix, 1 tsp Vanilla Extract
French Toast:
- In a shallow dish, add in your egg whites, milk, the remaining half of the apple cider, and vanilla. Give it a quick mix.15 g (1 tbsp) Egg Whites, 15 ml (1 tbsp) Unsweetened Protein Plant Milk, 1/2 of Apple Cider, 1 tsp Vanilla Extract
- Dip in a slice of challah bread and coat back and forth.67 g (0.15 lb) Challah Bread
- Spray a small pan with olive oil, heat on medium heat, and add in your coated bread. Cook on each side until golden brown. Repeat for the second slice.Olive Oil Spray
Cinnamon Sugar:
- In another shallow dish, mix together your cinnamon sugar ingredients. Coat each slice of French toast and evenly coat.8 g (2 tsp) Zero Calorie Sweetener, 1/2 tsp Cinnamon
- Add to a plate and spread or pipe on a layer of your yogurt topping. Place on top the second slice and repeat until you’ve used up your yogurt.
- Sprinkle with any remaining cinnamon sugar. Add some syrup if desired and then dig in!
