Ingredients

Dry:

  • 98 g Self Rising Flour (King Arthur)
  • 60 g Keto Wheat Flour (King Arthur – or sub equal parts SR flour)
  • Pinch of Salt
  • ยฝ tsp Baking Powder
  • 32 g Zero Calorie Sweetener (H-E-B)
  • 1 tsp Cinnamon
  • ยฝ tsp Nutmeg

Wet:

  • 284 g Plain Non-Fat Greek Yogurt (Siggiโ€™s)
  • 40 g Carrot (grated)
  • Olive Oil Spray

Coating:

  • 14 g Unsalted Butter (Vital Farms)
  • 2 tbsp Coconut Sugar (Big Tree Farms)
  • 1 tsp Cinnamon
  • 30 g Powdered Sugar

Instructions

  • Mix together dry ingredients in a bowl. Add in your wet (besides the spray oil).
    98 g (0.78 cups) Self Rising Flour, 60 g (0.5 cups) Keto Wheat Flour, Pinch of Salt, 1/2 tsp Baking Powder, 32 g (8 tsp) Zero Calorie Sweetener, 1 tsp Cinnamon, 1/2 tsp Nutmeg, 284 g (1.42 cups) Plain Non-Fat Greek Yogurt, 40 g (0.33 cups) Carrot
  • Slowly incorporate with a wooden spoon.
  • Add dough to a flour surface and continue kneading until a dough forms. You may need to add flour if too sticky.
  • Then cut into 12 equal parts and roll into balls (I weighed out each little ball to ensure they were the same).
  • Add to your air fryer basket. Spray with olive oil & air fry at 375ยฐ for 6-8 mins. Let them cool.

Coating:

  • Roll half in powdered sugar and some dipped in melted butter and then your coconut sugar/cinnamon mixture.
    14 g (1 tbsp) Unsalted Butter, 2 tbsp Coconut Sugar, 1 tsp Cinnamon, 30 g (0.25 cups) Powdered Sugar

Extra Notes & Tips

P.S. I highly recommend using a scale for this recipe to get the dough right. Theyโ€™re really cheap on Amazon and make portions so much more exact. Someoneโ€™s 1/4th cup measurement might be more densely packed than someone elseโ€™s, resulting in inaccurate consistencies.
