Ingredients
Dry:
- 98 g Self Rising Flour (King Arthur)
- 60 g Keto Wheat Flour (King Arthur – or sub equal parts SR flour)
- Pinch of Salt
- ½ tsp Baking Powder
- 32 g Zero Calorie Sweetener (H-E-B)
- 1 tsp Cinnamon
- ½ tsp Nutmeg
Wet:
- 284 g Plain Non-Fat Greek Yogurt (Siggi’s)
- 40 g Carrot (grated)
- Olive Oil Spray
Coating:
- 14 g Unsalted Butter (Vital Farms)
- 2 tbsp Coconut Sugar (Big Tree Farms)
- 1 tsp Cinnamon
- 30 g Powdered Sugar
Instructions
- Mix together dry ingredients in a bowl. Add in your wet (besides the spray oil).98 g (0.78 cups) Self Rising Flour, 60 g (0.5 cups) Keto Wheat Flour, Pinch of Salt, 1/2 tsp Baking Powder, 32 g (8 tsp) Zero Calorie Sweetener, 1 tsp Cinnamon, 1/2 tsp Nutmeg, 284 g (1.42 cups) Plain Non-Fat Greek Yogurt, 40 g (0.33 cups) Carrot
- Slowly incorporate with a wooden spoon.
- Add dough to a flour surface and continue kneading until a dough forms. You may need to add flour if too sticky.
- Then cut into 12 equal parts and roll into balls (I weighed out each little ball to ensure they were the same).
- Add to your air fryer basket. Spray with olive oil & air fry at 375° for 6-8 mins. Let them cool.Olive Oil Spray
