Ingredients

Crepes:

  • 1 Large Brown Egg
  • 180 ml Unsweetened Plant Milk
  • 1 tsp Vanilla Bean Paste
  • 15 g Chocolate Protein Powder
  • 30 g All Purpose Flour
  • Pinch of Salt
  • Olive Oil Spray

Chocolate Yogurt Filling:

  • 113 g Wallaby’s Whole Milk Plain Greek Yogurt
  • 4 g Black Cocoa Powder
  • 10 ml Sugar Free Syrup
  • 1-2 tbsp Water

To Top:

  • 14 g Crushed Honey Graham Crackers
  • 15 g Sugar Free Marshmallows
  • 10 ml Sugar Free Syrup

Instructions

Crepes:

  • Add your egg, milk, and vanilla to a large mixing bowl and whisk until smooth.
    1 Large Brown Egg, 180 ml (0.75 cups) Unsweetened Plant Milk, 1 tsp Vanilla Bean Paste
  • Sift in your protein powder and flour. Sprinkle with a pinch of salt and mix until you have a runny batter.
    15 g (2 tbsp) Chocolate Protein Powder, 30 g (0.25 cup) All Purpose Flour, Pinch of Salt
  • Grab another bowl and use a strainer to get any lumps out. This step is optional but highly recommended. It will ensure a smooth and even batter.
  • In a nonstick pan, spray olive oil and heat on low to medium. Add a large scoop of batter. Maneuver the pan to create an even circular shape.

  • Cook until bubbles form and then carefully flip over. Cook for another 30 seconds and then add to a plate. Repeat until all batter is used.

Chocolate Yogurt Filling:

  • Add your yogurt ingredients to a bowl and mix until smooth. Set aside.
    113 g (0.5) Wallaby’s Whole Milk Plain Greek Yogurt, 4 g (0.5) Black Cocoa Powder, 10 ml (2 tsp) Sugar Free Syrup, 1-2 tbsp Water

Assemble:

  • Spread yogurt to one half of the crepe and top with some crushed graham crackers. Fold the other side over and then fold again to create a triangle. Repeat until all are made.

To Top:

  • Top with marshmallows and optionally torch them to get that nice char.
    15 g (0.25 tbsp) Sugar Free Marshmallows
  • Finish it off with more crushed graham crackers and a drizzle of sugar free syrup!
    14 g (1 tbsp) Crushed Honey Graham Crackers, 10 ml (2 tsp) Sugar Free Syrup
