Avocado Oil Spray
100gNonfat Plain Greek Yogurt(Siggis)
100gLow Fat Cottage Cheese(Good Culture)
1Lime(juiced)
Pinchof Salt
1tspEverything but the Elote Seasoning(Trader Joe’s)
2tspChili Lime Seasoning(Trader Joe’s)
½tspChili Powder
½tspCayenne
1LargeHandful of Cilantro

Add your corn to a baking sheet and evenly spray with avocado oil. Air fry at 400° for 20 mins, tossing halfway.
In a blender, add in all remaining ingredients but the cilantro and feta. Blend until smooth.
Add to a small bowl and mix in the cilantro and feta (you can save some for topping!).
Once your corn is ready, add to a large mixing bowl and pour in the dressing. Toss well and then divide into 4 servings. Top with cilantro & feta.
