Ingredients

  • ~150 g Sweet Potato (cubed)
  • ¼ small Red Onion (cubed)
  • ½ Jalapeño (cubed)
  • 2-3 cloves Garlic (minced)
  • 1 tsp Olive Oil
  • Salt & Pepper (to taste)
  • Chili Powder, Smoked Paprika, Cayenne, Cumin (to taste)
  • ½ link Vegan Italian Sausage (Trader Joe’s)
  • 25 g Spinach
  • 3 tbsp Egg Whites
  • 2 Whole Brown Eggs (Vital Farms)

To Top:

  • Everything But The Bagel Seasoning
  • Fresh Cilantro (chopped)
  • 14 g Fat Free Feta (Cafe Olympia)

Instructions

  • Prep your veggies. For the SP, cut a large SP roughly in half and poke holes with a knife. Microwave for 1.5-2 mins to soften. Then cube.
  • In a medium pan, add in your oil and your onion, jalapeño, and garlic. Sauté for 2-3 mins. Then add in some salt & pepper.
  • Add in your sweet potato and spices. Sauté for 5-6 mins. Add in a splash of water and cover with a lid to allow the potatoes to soften.
  • Remove lid after roughly 3-4 mins and add in your sliced vegan sausage and spinach. Repeat with the lid.
  • Create two holes and add in your egg whites and whole eggs. Cover with lid again and cook on low to medium until white sets.
  • Top with your toppings and then dig in!
