Egg Mixture:

1Brown Egg(Vital Farms)
1tspWhite Vinegar
1tspBaking Powder
Flour Mixture:

½tspOnion & Garlic Powder

Instructions
Rip tofu into small pieces and place in a bowl.
444 g(15oz) High Protein Extra Firm Tofu
In another bowl, whisk together egg mixture.
45 ml(3tbsp) Plant Protein Milk, 1 Brown Egg, 1 tsp White Vinegar, 1 tsp Baking Powder
In a third bowl, mix together the flour ingredients.
20 g(2.5tbsp) All Purpose Flour, 20 g(2.5tbsp) Unflavored Protein Powder, 1/2 tbsp Tapioca Flour, 1 tsp Smoked Paprika, 1/2 tsp Onion & Garlic Powder, Salt & Pepper
Finally, in a fourth bowl, add in the rice crumbs.
65 g(6.5tbsp) Rice Crumbs
Use one hand and coat each tofu chunk into the flour. Use another hand and dip into the eggs. Then use the dry hand to dip into the crumbs.
Add to air fryer basket. Repeat for all & spray with avocado oil.
Avocado Oil Spray
Air fry at 400° for 15-18 mins.
Add to rice bowls, wraps, tofu “chicken” and waffles. The options are endless!
