Instructions
Filling:
Crumble up your tofu using your hands and add to a bowl. Then crack in an egg.
255 g(9oz) Extra Firm Tofu, 1 Large Brown Egg
Prep all your veggies - finely mince the garlic, finely shred your carrots, and cut the green onion in to slices.
Add all the veggies and the seasonings to the bowl and mix using a fork, mashing down any large pieces.
15 ml(tbsp) Rice Vinegar, 15 ml(tbsp) Low Sodium Soy Sauce, 7 ml(tbsp) Sugar Free Syrup, Sprinkle of Black Pepper
Then sprinkle in your tapioca flour or cornstarch to help bind it even further and get rid of excess liquid.
15 g(tbsp) Tapioca Flour or Cornstarch
Dumplings:
Add half the oil to a nonstick pan (I used a 10” pan) and let it heat up on low to medium heat.
15 g(tbsp) Olive Oil
Use an ice cream scooper to scoop equal portions of your filling to the pan. I cooked half the batch (8 dumplings).
16 Wonton Wraps
Top each scoop with a wonton wrapper and gently cup it around the filling, leaving room around them.
Fill up the pan with about 1/3 cup of water and close with a lid. Let it cook in the steam for at least 10 minutes. Ensure not to open the lid too early as it will release the steam we want.
After 10 minutes, the wrappers should look soft and cooked down.
Top your 8 dumplings with half the soy sauce and chili oil. Sprinkle with sesame seeds and fresh green onion.

Remove from the pan and repeat again for the second batch!
