Ingredients
French Toast:
- 46 g Egg Whites
- 30 ml Nonfat Milk (Whole Foods)
- 4 ml Vanilla Extract (Nielsen Massey)
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- 15 g Sweet Potato Puree (Farmer’s Market)
- 76 g 100% Whole Grain Sugar Free Bread (Natures Own)
Sweet Potato Yogurt:
- 113 g 0% Milkfat Greek Yogurt (Fage)
- 4 ml Vanilla Extract (Nielsen Massey)
- 30 g Sweet Potato Puree (Farmer’s Market)
- 6 g Vanilla Instant Pudding Mix (Simply Delish)
- 15 ml Nonfat Milk (Whole Foods)
Toppings:
- 20 g Mini Maple Flavored Marshmallows (Trader Joe’s)
- 8 g Pecans (chopped)
Instructions
French Toast:
- In a shallow dish, add all your ingredients besides the bread and mix until smooth.46 g (3 tbsp) Egg Whites, 30 ml (2 tbsp) Nonfat Milk, 4 ml (1 tsp) Vanilla Extract, 1/2 tsp Cinnamon, 1/4 tsp Nutmeg, 15 g (1 tbsp) Sweet Potato Puree
- Heat a small nonstick pan on medium heat and lightly spray with olive.
- Dip a slice of bread in the French toast mixture and coat evenly on both sides. Add to the pan and cook until golden brown on each side. Repeat for the remaining slices. You should use up all the mixture.76 g (3 slices) 100% Whole Grain Sugar Free Bread
Sweet Potato Yogurt:
- In a mixing bowl, add in all your ingredients and mix until smooth and creamy.113 g (0.5 cup) 0% Milkfat Greek Yogurt, 4 ml (1 tsp) Vanilla Extract, 30 g (2 tbsp) Sweet Potato Puree, 6 g (1.25 tsp) Vanilla Instant Pudding Mix, 15 ml (1 tbsp) Nonfat Milk
Assemble:
- In your serving plate, add a slice of toast and spread a layer of sweet potato yogurt. Add another slice and repeat until you have used it all up.
Toppings:
