Pistachio Protein Ice Cream

Ingredients
Ice Cream:
- 414 ml Vanilla Protein Shake (FairLife Core Power)
- 60 ml Nonfat Milk (Whole Foods)
- 14 g Pure Pistachio Paste (Gusto Etna)
- 6 g Vanilla Instant Pudding Mix (SimplyDesserts)
- 9 g Reduced Fat Whipped Topping (Cool Whip)
Mix-Ins:
- 28 g Cinnamon Pistachios (chopped (Wonderful Pistachios))
Instructions
Ice Cream (Using Ninja Creami):
- Add your ingredients to your Ninja Creami container. Use a frother or whisk to mix everything together. It doesn’t have to be perfect since the mixture will go through the machine as well.414 ml (1.75 cups) Vanilla Protein Shake, 60 ml (0.25 cups) Nonfat Milk, 14 g (2 tbsp) Pure Pistachio Paste, 6 g (1 tsp) Vanilla Instant Pudding Mix, 9 g (2 tbsp) Reduced Fat Whipped Topping
- Cover with the lid and freeze at least overnight. When you’re ready to enjoy, remove from freezer and let it thaw on the counter for 20-30 minutes.
- Add to your Ninja Creami machine and spin on “Full” using the “Light Ice” setting. Remove and there will be a large hole in the center.
Mix-Ins:
- Add your chopped pistachios to the center, close it up, and spin on “Full” again but as a “Re-Spin”. This time, the result should be super smooth and creamy.28 g (0.25 cups) Cinnamon Pistachios
- Scoop out a couple scoops and serve in a bowl or glass. Optionally top with more pistachios and butter.
Ice Cream (No Creami):
- Add all ingredients to a blender and blend until smooth.
- Pour mixture into silicone ice cube trays and freeze for at least 4–6 hours, or until fully solid.
- Transfer frozen cubes to a high-speed blender or food processor. Blend until smooth and creamy, adding a splash of milk only if needed to help it blend.
Mix-Ins:
- Fold in chopped pistachios by hand or pulse a few times to incorporate.
- Scoop into a bowl or container and serve immediately as soft serve, or freeze for 30–60 minutes for a firmer texture.
- Top with more pistachios if desired.
