Peach Crumble French Toast Casserole
If peach cobbler and high protein French toast had a baby, this peach crumble French toast casserole would be it. It’s soft and custardy in the center, golden on top, and layered with juicy caramelized peaches and buttery cinnamon crumble in every single bite. It’s basically the best of both worlds—sweet breakfast meets meal prep that actually keeps you full.

Ingredients
Peach Compote:
- 14 g Unsalted Butter (Vital Farms)
- 250 g Cubed Yellow Peach
- 16 g Zero Calorie Brown Sugar Sweetener (H-E-B)
- 1 tsp Cinnamon
- 1-2 tbsp Water
Crumble:
- 30 g All Purpose Flour (King Arthur)
- 15 g Vanilla Protein Powder (Quest)
- 1 tsp Cinnamon
- ½ tsp Salt
- 1 tsp Vanilla Extract
- 15 ml Nonfat Milk (Whole Foods)
- 7 g Unsalted Butter (melted (Vital Farms))
French Toast Custard:
- 240 ml Nonfat Milk (Whole Foods)
- 80 ml Half & Half or Heavy Cream (Nutpods)
- 3 Large Brown Eggs (Vital Farms)
- 1 tsp Vanilla Extract
- 15 g Vanilla Protein Powder (Quest)
Casserole:
- 360 g Protein White Bread (Sola)
Topping:
- 283 g 0% Milkfat Yogurt (Fage)
Instructions
Peach Compote:
- Heat a medium size pan on low to medium heat. Add your butter and let it melt and coat the bottom.14 g (1 tbsp) Unsalted Butter
- Prep and cube your peaches. You can leave the skin on. Add to the pan and evenly coat in the butter.250 g (1.66 cups) Cubed Yellow Peach
- Top with the brown sugar and cinnamon and mix again. Then add a splash of water and let the peaches cook on low heat while you prepare everything else. Stir every few minutes.16 g (tsp) Zero Calorie Brown Sugar Sweetener, 1 tsp Cinnamon, 1-2 tbsp Water
Crumble:
- In a mixing bowl, add in your crumble ingredients. Mix together until it is a crumbly texture. Set aside.30 g (0.25 cups) All Purpose Flour, 15 g (1 tbsp) Vanilla Protein Powder, 1 tsp Cinnamon, 1/2 tsp Salt, 1 tsp Vanilla Extract, 15 ml (1 tbsp) Nonfat Milk, 7 g (0.5 tbsp) Unsalted Butter
French Toast Custard:
- In a large mixing bowl, add in your custard ingredients and whisk together to evenly mix. Ensure all the egg yolks are cracked and the protein powder is evenly mixed in with minimal clumps.240 ml (1 cups) Nonfat Milk, 80 ml (0.33 cups) Half & Half or Heavy Cream, 3 Large Brown Eggs, 1 tsp Vanilla Extract, 15 g (1 tbsp) Vanilla Protein Powder
Casserole:
- Grab your slices bread and cut into cubes.360 g (8 slices) Protein White Bread
- Grab a 7” - 9” cake springform pan and spray with oil. Then line with a large enough piece of parchment paper, leaving extra to hang over the edges.
- Add 1/3 of the cubed bread to the base and press down with your hands. Add 1/3rd of the peach compote evenly on top and then sprinkle with about a quarter of the crumble. Use the back of a spoon to gently press it all down to compress.
- Repeat with a second layer of bread, compote, and crumble. Press everything down again. You can leave some extra compote for the end as a topping if desired.
- And repeat again for a third layer, ensuring you have some crumble left over for the finishing topping.
- Carefully evenly pour in your french toast custard all over the top, letting it all soak down and fill up all the crevices. It should fill up your pan perfectly.
- Do one finally press down with your spoon so flatten and compress everything. Top with your remaining crumble.
- Bake at 350° for 60-65 minutes if using a 7” pan and 50-55 minutes if using a 9” pan. After 30 minutes, cover the top with aluminum foil to keep from burning.
- Keep an eye on it as oven temperatures will vary for everyone. And check with a toothpick to ensure it is fully cooked through before removing.
- Let it cool for at least 30 minutes before cutting into 5 even slices.
Topping:
- When serving, top with a dollop of yogurt for an extra protein boost and creamy pairing.283 g (1.16 cups) 0% Milkfat Yogurt
- And if you had any peach compote left over, spoon on top. Note: if you stored the extra compote in the fridge, it will harden a little. Just give it a quick 15-20 second microwave and it’ll soften.
