Warm, cozy, sweet, and swirled with that buttery cinnamon sugar goodness, but made in a way that feels realistic for meal prep and busy mornings.

Wet:
Grab a glass baking dish (I use an 8x6x2 inch / 6 cup) and lightly spray olive oil in the base and all up the edges. Use a paper towel to wipe any excess.
Olive Oil Spray
Then mash your banana with a fork until pulpy. Then add the remaining wet ingredients and give it all a good whisk.
Add the dry right on top of the wet. Very carefully mix with a fork, trying to not spill. Alternatively you can do all these steps in a large mixing bowl, then transfer to your greased baking dish but I always try my hardest to avoid unnecessary dishes!
60 g(0.75cup) Old Fashioned Oats, 60 g(0.5cup) Oat Flour, 31 g(1scoop) Vanilla Protein Powder, 1 tsp Cinnamon, 1 tsp Baking Powder, Pinch of Salt
Once mixed and smooth, set aside.
Preheat oven to 350°
Cinnamon Swirl:
In a small bowl, add the butter, sugar, and cinnamon. Mix to the until a smooth paste forms. If it’s thick or chunky, microwave for 5-8 seconds to soften it up.
14 g(1tbsp) Softened Unsalted Butter, 8 g(1tsp) Zero Calorie Brown Sweetener, 1/2 tsp Cinnamon
Add the butter mixture to the corner of a zip lock bag to use as a piping bag.
Snip the tip, then swirl on a diagonal pattern on top. Bake for 20-25 minutes.
Icing:
Let it cool for at least 20-30 minutes before adding your icing.
Mix the icing ingredients together in a small bowl until smooth and runny. Then drizzle it on top, following the same cinnamon swirl pattern.
Cut in to 6 squares and carefully remove from your dish. It may not come out cleanly or break a little which is fine, it will still all taste the same!
Topping:
For that extra protein boost, add a dollop of yogurt for a creamy contrast.
